September Recipe of the Month: Apple Cinnamon Baked Oats

A warm, flavorful treat for a crisp autumn morning.

This recipe uses simple, whole ingredients for a balances and nourishing meal or snack.

September is here and while it may still be 80 degrees outside, the season of fall is right around the corner! With the start of the new season comes new flavors and produce to incorporate into our meals.

Peak season for apples is early fall, so it’s only fitting that our recipe this month features fresh apples paired with the warm flavors of cinnamon, ginger, and nutmeg for a cozy, delicious, and nutritious breakfast or snack. 

This recipe for baked oats is the perfect way to start off the day as it’s loaded with fiber and complex carbohydrates. Add some Greek yogurt on top and you have a protein-packed, nourishing breakfast to eat before school. Or, grab a slice as an after-school pick-me-up!

One of the best things about baked oats is that they can be prepped in advance and last all week long, so you don’t have to spend time cooking breakfast in the morning. You can even switch up the recipe by adding in additional fall flavors such as diced pears, chopped pecans or walnuts, or pumpkin seeds! So, grab a baking dish and let’s make a week’s worth of yummy breakfasts!

Apple Cinnamon Baked Oats

Serves 6 | Prep: 10 min | Bake: 35 min

Ingredients

  • 2 cups rolled oats

  • 1 tsp baking powder

  • 2 tsp cinnamon

  • 1 tsp nutmeg

  • 1 tsp ground ginger

  • ¼ tsp salt

  • 2 eggs

  • 1½ cups milk of choice

  • ½ cup plain Greek yogurt

  • ¼ cup maple syrup or honey for sweetness

  • 1 tsp vanilla extract

  • 2 large apples, diced

Directions

  1. Preheat oven to 350°F. Lightly grease an 8×8-inch baking dish.

  2. In a large bowl, mix oats, baking powder, cinnamon, nutmeg, ginger, and salt.

  3. In another bowl, whisk together eggs, milk, Greek yogurt, maple syrup or honey, and vanilla.

  4. Pour the wet ingredients into the dry ingredients and stir until combined.

  5. Fold in the diced apples.

  6. Pour into the prepared baking dish and spread evenly.

  7. Bake for 35 minutes or until the top is lightly golden and the center is set.

  8. Let cool for 5–10 minutes. Serve warm with a spoonful of Greek yogurt, nut butter, or a drizzle of maple syrup.
