What better way to welcome the fall season than to incorporate pumpkin into our Recipe of the Month?
October is the time for cozy autumn mornings filled with the smell of pumpkin spice, so this is the perfect breakfast recipe to start your day off right!
But pumpkin doesn’t just taste delicious! By adding pumpkin into our pancakes, we add loads of fiber and additional nutrients such as Vitamin A, Vitamin C, and potassium. This means that these pancakes will keep us full and help regulate digestion while also providing benefits such as immune health and blood pressure management!
There is also an additional hidden benefit to this pancake recipe: protein! By blending in some cottage cheese, we are ensuring that this breakfast is as nutrient-dense as possible in order to help keep us full and satisfied throughout the morning. The best part is that you can’t taste the cottage cheese under the delicious cinnamon and pumpkin flavors, so eating your protein just got that much easier!
This protein and nutrient-packed pancake recipe is the perfect way to start your day off on the right foot. So, grab a blender and a frying pan and let’s get cooking!
